What are Red Mafia Pigs?
The phrase " Red Mafia Pigs " was coined by my wife, because all those little red piglets run around in a group controlling everything that goes on in the pigpen, much like a little Mafia.
But what they really are, is a crossbreed pig that produces some of the best meat around. They are a cross between a Tamworth and Duroc breed. The Tamworth, also known as Sandy Back and Tam, is a breed of domestic pig originating in its namesake Tamworth, Staffordshire United Kingdom, with input from Irish pigs. It is among the oldest of pig breeds, and best know for its amazing bacon. Tamworth is lean and slow-growing which does not make them ideal for a production breed. This is where the Duroc comes in.
The Duroc pig is an older breed of domestic pig. The breed was developed in the United States and formed the basis for many mixed-breed commercial hogs. Duroc pigs are reddish-brown and golden yellow, large-framed, medium length, and muscular, with partially drooping ears. They tend to be one of the least aggressive of all swine breeds raised for meat. Duroc's have a faster growth rate with a higher fat content than the Tamworth.

Combining these two breeds gives the best of both worlds with some of the most flavorful meat and tastiest bacon you will ever have.
Bacon!
Tamworths are best known for their bacon. Combine that with Duroc and you get perfection. You will never want to buy bacon in the store after having this bacon!
Flavor comes from fat!
We harvest our Red Mafia Pigs at around 300lbs live weight. This achieves a perfect layer of fat and marbling. This gives the processor more to work with. Excess fat can be trimmed leaving just the right amount for full flavor!
Not your store bought pork!
Red Mafia Pigs are not just red on the outside, they are red on the inside too. You won't find pale pink meat here. This red meat is tender and full of flavor.
